I made this salad today to go with Shrimp Curry http://kimmykitchen.blogspot.com/2008/10/chicken-curry.html. It was a hit and went really well with the curry dish.
1 fresh or 2 cans of pineapple cut into bite-sized chunks
1 banana sliced chunky
2 mangoes diced
1 peach (fresh or canned) cut into bite-sized chunks
1/3 or more roasted cashews (to roast fresh cashews stir constantly over high heat in a dry pan until golden
Gently stir together.
1/2 C whipping cream
1/4 tsp cinnamon
Vanilla Bean seeds from about 1/8 of a vanilla bean (or use a few drops of vanilla extract)
Pour over the top and gently stir.
